
BBQ Ranch Grain Bowl with Sweet Potatoes
Ingredients:
- 1 cup cooked quinoa or brown rice
- 1 medium sweet potato, cubed
- 1 cup Vegan Valley Ranch sauce
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels
- 1/4 cup BBQ sauce
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Toss sweet potato cubes with olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
- In a large bowl, combine cooked quinoa or rice, roasted sweet potatoes, black beans, and corn.
- Drizzle with Ranch and BBQ sauce.
- Toss gently to combine and serve warm.
