
Chipotle Sweet Potato Taco Bowl
Ingredients
- 2 medium sweet potatoes, cubed
- 1/2 cup Chipotle sauce
- 1 tbsp olive oil
- 6 small corn tortillas
- 1/2 cup shredded lettuce
- 1/4 cup diced red onions
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with Chipotle sauce, olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
- Warm tortillas and fill with roasted sweet potatoes, lettuce, and red onions.
- Garnish with cilantro and serve immediately.
