Mild Cashew Cheese & Herb Stuffed Mushrooms

Ingredients:

  • 12 large white mushrooms
  • 1/2 cup Vegan Valley Mild cashew sauce
  • 2 tbsp breadcrumbs
  • 2 tbsp fresh parsley, chopped
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  • Preheat oven to 375°F (190°C).
  • Clean mushrooms and remove stems, hollowing out the caps slightly.
  • In a bowl, mix Mild cashew sauce, breadcrumbs, parsley, garlic, salt, and pepper.
  • Spoon the mixture into each mushroom cap.
  • Arrange mushrooms on a baking sheet and bake for 20 minutes until golden and bubbly.
  • Serve warm as an appetizer.
